This is Nc'Nean Distillery's seasonal, limited release of Huntress, named after Neachohain the Gaelic Queen of Spirits. The spirit is a result of Nc'Nean's experiments with various yeasts and the complexity that they bring to the Whisky. This is made from three yeast types: Anchor, which produces the traditional nutty flavours of their whisky; Fermentis, a yeast used in the production fo wine bringing a juicy, fruity character; and finally Distiller Max RM, a yeast traditionally used in the product of Rum bring a layer of tropical fruit and minerality.
This was distilled in August 2018, bottled in March 2022. Aged in a combination of 61% STR red wine casks and 39% ex-Bourbon casks. A limited release of 4,447 bottles.
Tasting Notes:
Appearance: pale gold.
Nose: fresh and mineral, exotic fruit
Palate: fruity, cereal notes, soft and creamy
Finish: lively and short marked by sweet spices and Honeycomb
