A fascinating Rhum Agricole produced by Bologne, a producer based in the region of Basse-Terre, Guadeloupe.
This bottling is made with “black cane”, a strain of sugar cane rarely seen due to its low yield. Although less economically viable for many farmers, the lower yield is said to be more concentrated in flavour, producing a richer rum. The cane is harvested once it has reached maturity, at one year old.
The cane is then meticulously cleaned and crushed, before being fermented for at least two days. The spirit is distilled in column stills, producing a rum of 70% ABV, which rested in stainless steel tanks for six months and gradually diluted in proof. The final strength is 50% ABV, which is still plenty warming and powerful.
Tasting Notes :
Appearance: Pure brilliance, crystalline clarity.
Nose : Soft, with great aromatic complexity, very harmonious and rich. The first nose is empyreumatic and exotic (cane, mango, maracuja), then evolves towards white flowers.
Palate : Soft, balanced. The mid-palate is concentrated, luxuriant, exuberant, and full of gourmet fruits: banana, pineapple, mango, pear, citrus fruits remain very present.
Finish: long and tenderly spicy (ginger). Exceptional persistence.
