An icon of the style of the Maison, Pale & Dry XO is made exclusively from eaux-de-vie of Grande Champagne, matured in 350-litre barrels of old Limousin oak, in our centuries-old cellars on the banks of the Charente, from Vinade to Jarnac. The progressive, meticulous reduction of the cognac’s ABV to 42% allows for the perfect balance between power and natural sweetness, emblematic of the Pale & Dry XO.

Tasting Notes :

Appearance : The hue is pale and subtle. A soft amber color, with delightful yellow tones.

Nose : Particularly delicate, notes of vanilla and apricot, enveloped by fresh notes of passion fruit, orange zest and almond.

Palate : Vanilla which blends into apricot aromas, highlighted by nuances of spices and ginger.

Finish: Intense and persistent, a perfectly balanced final touch of this rare cognac.

The mashbill for Woodford Reserve features a high percentage of rye: 72% corn, 18% rye and 10% malt. The whiskey is also unusual for being triple distilled and having the lowest proof upon entering the barrel where it matures for at least six years. A must have Kentucky bourbon. Makes a wonderful Old-Fashioned cocktail!

Tasting Notes: 

Appearance: Clean, brilliant honey amber. 

Nose: Heavy with rich dried fruit, hints of mint and oranges covered with a dusting of cocoa. Faint vanilla and tobacco spice.

Palate : Rich, chewy, rounded and smooth, with complex citrus, cinnamon and cocoa. Toffee, caramel, chocolate and spice notes abound.

Finish : Silky smooth, almost creamy at first with a long, warm satisfying tail.

Proefnotitie: 

Neus: De neus is kruidig en hartig, met aroma's van rozenblaadjes, bosbessen, kersen, bramen en frambozenjam.

Smaak: De smaak is licht en middelfijn, met rijpe, korrelige tannines, perfect in balans met een lange afdronk

Het huis: Sandhi is een project wat in 2010 gestart is door Rajat Parr (top sommelier) en Sashi Moorman (wijnmaker). Zij zagen in Santa Barbara een plek waar Chardonnay en Pinot Noir gemaakt kunnen worden die net zo elegant zijn als wijnen uit Europa. Santa Barbara County ligt in het zuiden van Californië. Daar zijn ze opzoek gegaan naar wijngaarden met oude stokken en met noordelijke expositie. Het is in de Santa Rita Hill’s (relatief) koel en er is veel afkoeling door wind van de stille oceaan.
